“Meaty” Vegan Burger


Veggie burgers tend to be mushy and fall apart.
This burger recipe provides the mouthfeel that I’ve wanted. It’s chewy and so flavorful
you don’t need ketchup. To TVP, add hot vegetable broth.
Then add ketchup, Worcestershire sauce, molasses and olive oil. Then add the spice: smoked
paprika, onion powder, salt, pepper and nutritional yeast.
Then add whole wheat flour. Mix it really well.
Then add vital wheat gluten. Mix it again until it turns into a dough. This takes a
little while, but you don’t have to knead it, so that’s good. Keep mixing until it’s
all combined. If you haven’t seen seitan before, it may look a little strange.
Let the dough rest for about 10 minutes while you preheat your oven to 350 degrees. Then
form patties and lay them on a baking sheet lined with parchment paper. The dough is kind
of wet, but it holds together well. Cover the baking sheet with foil and bake
it them for 30 minutes. After 30 minutes, remove the foil and bake them for another
15 minutes. And this is your burger. It looks a little
strange, but it tastes pretty good. It’s got some bite; it’s flavorful and won’t
