Hyderabadi Qubooli | Chana Dal Biryani | Qubooli Biryani | Muharram Recipe


Qubooli is a traditional lentil biryani from Hyderabad prepared with split Bengal gram cooked with dum or steam the list of ingredients may seem daunting but it is quite a simple biryani to make ingredients and quantities are listed in the description box let’s see what all we need 2-3 tbsp oil 1.5 cups rice soaked in water for 30 minutes, then the water drained out chana dal/split bengal gram soaked in water for 1 hour and water discarded 50 grams dahi/yogurt 2 chopped tomatoes 1 tbsp ginger garlic paste 1 chopped onion 4 tbsp pudina/mint leaves. hara dhania/cilantro is also used but since it is not available because of excessive rains we could not use it. take 4 tbsp of it as well 2 sliced onions crisp fried till brown 1/2 tsp coriander powder 1 tsp shah jeera 1 tsp deghi mirch/red chilli powder salt as per taste 1 tsp garam masala 1/2 tsp turmeric powder 15-20 saffron threads soaked in 3 tbsp warm milk 1 tbsp rose water whole spices – 2 each of black & green cardamom, 4 cloves and 1-inch cinnamon & 2 bay leaves ( not shown here) 2 tbsp desi ghee/clarified butter we will boil the chana dal first. put it in the pressure cooker & give just 1 whistle you can boil it in a pot as well for 10 minutes keep heat on medium and add 1 cup water then close the pressure cooker give just 1 whistle and then put off the heat. let the pressure ease then open the cooker we are cooking the dal till just a bit soft. now strain out the dal then remove to a bowl and keep aside we will cook the dal now keep pan on medium heat add oil and let it heat up then add the ginger garlic paste and saute for a minute add the chopped onions and saute till they turn light pink add the chopped tomatoes and cook till they turn mushy add 1 tsp shah jeera 1 tsp red chilli powder 1/2 tsp turmeric powder reduce heat to low and give a stir add 1/2 tsp coriander powder 1 tsp salt 1/2 tsp garam masala and 1 tbsp mint leaves & 1 tbsp cilantro as well. we did not have cilantro hence we could not add stir cook for a minute ensure heat is on low and add the yogurt and stir continuously till it mixes well cook for about a minute add the boiled dal and mix well keep the heat on low medium and cover with a lid. cook for 5 minutes after 5 minutes the dal is half cooked it will get fully cooked when we give dum/cook in steam a bit later so do not cook it completely at this stage it should just about get mashed if you press it between the fingers put off the heat and transfer to a bowl. keep aside we will now cook the rice put 1.25 liters water in a pot. keep heat on medium and add 1 tsp shah jeera bay leaves the crushed black and green cardamom, cloves and cinnamon add 2 tsp salt and 1 tsp oil.this will help keep the rice grains separate we will not cook the rice completely but only about 70% give a stir and let the water come to a rolling boil add the soaked rice and stir well reduce heat to low and cover the rice. cook for 5 minutes and check in between if they are done after 5 minutes the rice are 70% done put off the heat and transfer the rice to a colander to strain out the water let the extra water drip out and then layer half the rice in a wok spread the dal evenly over the rice layer spread half the fried onions and 1.5 tsp each of mint and cilantro though we do not have cilantro right now spread the rest of the rice and then the fried onions, mint and cilantro over the rice cilantro is a must as it gives a wonderful flavor to the dish but unfortunately due to excessive rains it is unavailable add the saffron soaked milk, rose water and 2 tbsp of clarified butter too to give dum we need to seal the lid firmly with wheat flour dough so that not steam escapes. we have put a layer of the dough all around the lid press the lid firmly on the wok to seal it well keep the wok on low heat and cook for 7-8 minutes after 7-8 minutes the biryani is done. let it sit for 5 minutes before you open the lid open the lid after 5 minutes. the biryani is ready. transfer to a serving dish remove the dough and then transfer the dish the qubooli is full of flavor and looks good do try this hyderabadi qubooli and share your experience in the comment serve it with raita or plain yogurt if you like the recipe and dish please like, comment, share our video and subscribe to our channel. thanks for watching
