Green Rice

This green rice is great paired with quesadillas
or any Mexican inspired dish. It has a nice tang because of the lime. For the rice, I use a method that I read about
on Saveur magazine’s website after several disappointing attempts using the instructions
on the package You’re going to bring 12 cups of water to
a boil over high heat. Make sure you use a pot with a tight-fitting lid. You’re going
to need it later. Rinse the rice in a strainer under cold water
for 30 seconds. Pour the rice into the boiling water and stir
it once. Let it boil uncovered for 30 minutes. While the rice is cooking, add these ingredients
to a food processor: the zest and juice of 2 limes, ½ of a 6 ounce bag of spinach, 1
bunch of cilantro, ¼ teaspoon black pepper and ½ teaspoon salt.Blend it all together
really well. Pour the mixture into a bowl that’s large
enough for the rice. After 30 minutes, you’re gonna drain the rice
for 10 seconds and then put it back in the pot with a lid and let it steam for 10 minutes. After 10 minutes, pour the rice into the bowl
with the spinach mixture and stir it all up. Taste it and adjust the seasonings and you’re
