Hello my good friends around the world! I have a different and very special recipe for you today, the best side dish for Sunday roast… Oven roasted potatoes, like you have never had! Perfectly seasoned, soft on the inside and wonderfully crispy and crunchy on the outside! That’s right! I’m sharing one of my favorite recipe secrets with you! And let’s start! Here, I have five nice potatoes, peeled, and I will chop them into four or six chunks, big pieces like this. Inside the pot. And, secret number one… take the knife and score them in many places so they will become crispier and will absorb all the flavors from the seasoning. And the last one is ready. Now, secret number two… Mr. lemon! If you add lemon here, while you are boiling the potatoes, first you will have the perfect shape on the potatoes and second, you will season with lemon inside the potatoes. So, cut two lemons in half… squeeze them, put the lemons in, season with salt and pepper… and cover with cold water. Put the pot on the heat… and when the water starts boiling, count ten minutes. After ten minutes, we will carry on with the recipe. My potatoes are ready. Remember to count from the moment that the water is boiling, ten minutes exactly. I need a strainer and I will strain them… immediately! We don’t want to leave them further inside the water because they will absorb moisture and we don’t want that. Take them out and let them rest, 2-3 minutes. While they are still hot, put them in a bowl. Perfect! And, you see? They are still steaming. Now, season with salt and pepper. Olive oil, of course extra virgin. Paprika… two cloves of garlic just squeeze them and inside. Some thyme. And the last ingredient to make them really croquante… it’s semolina! You can use the fine one. My potatoes are almost ready and my oven is preheated to 200 degrees Celsius set to fan. Put a baking pan inside to make it extremely hot. Then, mix and mix. My pan should now be very hot, extremely hot. And you have to be very fast. Take it out… pour the potatoes on the pan, spread them, and inside the oven. Now, cook them for forty minutes, four zero. Every ten minutes, don’t forget to flip them over to become crispy from all sides, and when they are crispy golden and nice, we will serve them. Can you smell my potatoes? No? But you can see them! Look at this! So croquante and so tasty, that you have never seen like this before, in your life, I swear! Look at this… look at this color and this crispiness! These are the most awesome potatoes you have ever tasted! I’m proud of myself… and you should be proud of yourselves when you make these potatoes!
