A Pro Chef Makes Banana Pancakes In A Tiny Kitchen | Good Chef, Bad Kitchen | Refinery29

a little bit nervous about this hi I'm chef Evan today I'll be making Bananas Foster pancakes before you find out the recipe click below to subscribe normally I cook at best so in New York City but today I'm in Jersey I don't know who those here hi my name is Jesse and this is my kitchen I do most my grocery shopping at the bodegas so I don't really cook in here too much I mainly use this kitchen for making smoothies and almost all the things that I have in my kitchen I got for free good luck ok today my challenges are gonna be not knowing this kitchen hopefully there's a whisk in here peanut butter it's gonna be interesting when I'm most scared but today is burning this place down pancakes deflating I don't think there's any measurement cups oh my gosh there's more peanut butter cough drops that's actually good idea let's get started the caramel sauce banana oil doing a quick saute thing first go ahead with the rub okay okay I'm just gonna wipe this out a little bit I'm gonna cut a little bit of butter we need sugar it's not hot enough yet I'm gonna wait if you want to get your pan really hot still waiting and then put the sugar in so it doesn't crystallize it's still waiting if you don't want to move the sugar too much cuz it'll crystallize is instead of carboys and it'll be chunky and you want like a smooth caramel I wonder if I turn the backbone on they'll give me more heat it works so you want the sugar to almost be burnt so just turn off the heat and stir the child some butter and okay put the bananas back in it's the easy part and then we're just gonna hope that the pancakes work I need something to mix this in it all the time short there's no measuring spoons so I'm gonna use this shot glass a double shot is two ounces or more I think I saw a double first measure up the dry ingredients 6 tablespoons of cake flour 1 teaspoon of baking powder 3 tablespoons of sugar but I mean I'm just eyeballing it two and a half tablespoons of water so let's see sorry Jessica and eggs I haven't seen a whisk it doubting to panic getting the egg whites to stiff feet and then folding it into the batter this is really important because you want really fluffy pancakes is there no whisk I think this might be the best that is what okay I feel like this hope might take half an hour oh I think we're there we get the pan super hot and it's like crispy and almost like fried so around the edges and then we put it in a convection oven to 400 degrees convection oven helps a steam and get super fluffy I don't know how long maybe 10 to 20 we'll be here all day flatter than normal so we're gonna wait five minutes I don't grab do it all over again this is kind of sad didn't turn out as well as I wanted to so let's try a second one these didn't really work out so I'm just gonna use a spoon I think that's good a spoon my old pastry chef retaining so the protein shaker was kind of shite we're gonna use two forks tied together I'm just a little sore from the protein shaker the most frustrating part was whisking the egg whites for sure without having a whisk I think this is as good as it gets let's try it I'm just incorporating the egg whites just slowly floating in so I don't deflate the bubbles this looks pretty good so far I'm just cross we're gonna set a timer for seven minutes and see what happens looking pretty good so I'm just touching for firmness and making sure it balances back I think it's not bad I'm not satisfied never satisfied I'm gonna make a third pancake cuz I want to make it higher and I'm gonna make some whipped cream with a cocktail shaker and magically it's cold or shaken again let's switch to a fork it's pretty good first time I eat these pancakes it was not like anything I've ever had before it was like more of a cake texture and then we served it to everybody else we were like yeah it's gonna be good top it off with the black sesame seeds smells pretty good in here what's going on I made you some pancakes they look amazing also I know my pan is like this these are huge pancakes it's dinner time these are bananas yeah I feel like we should do a toast first bite since you made it okay cheers Cheers I'm impressed myself better trash on a scale of one to ten I think I did seven cuz I think it tasted really good but I didn't get the height I wanted Jesse that was great and I didn't set the house on fire so yeah a solid seven I really hope that this inspired Jesse to cook more this proves that you can make great pancakes in any kitchen thanks so much for watching to watch more videos like this click here and to subscribe to refinery29 click here
