നാടൻ ചെമ്മീൻ റോസ്റ്റ് – Easy Prawns Roast ( Kerala Style )


Hello friends. Welcome to ‘Taste & Travel Tales’ Today I’m going to prepare ‘Prawns Roast’ (South Indian – Kerala Style). This is a very simple yet delectable preparation and even bachelors can prepare the same with much ease. For preparation, first we need 3 big onions. Here as I have only small onions, I’ve taken 6. 2 tablespoons of Chilly powder 1 tablespoon of Pepper powder and Salt to taste. Then ofcourse prawns. Here I’ve taken 200gm small sized
red prawns as it tastes best compared to large prawns. Next what we need is 3 tablespoons of Coconut oil. Incase coconut oil is not available, any other refined oils like vegetable oils can be used. Now heat a pan. Once the pan is hot, pour oil into it. When oil is heated up, add finely sliced onions. Add a little bit of salt. This helps to get the onions sauted quickly. Now that onion is sauted properly, it has turned to transparent. Then add chilly powder, pepperpowder and salt to taste. Now mix everything well. Continue sauteing on medium flame until all the raw smell of the added powders are gone. When the raw smell is gone, add prawns. Here I’ve taken fresh prawns as Frozen prawns don’t taste that good. Add some water inorder to mix it up well. Now check whether salt is enough & if not, add salt to taste. If there is not enough salt, then the sweetness of onion will stand out. Turn the flame to simmer and cover the pan with a lid for sometime. Some water will come out from prawns also and so it will get cooked in the same. Normally ginger and garlic is also added in similar cuisines. But here I’ve not done it. In this roast, the taste is purely derived from natural taste of prawns, sweetness of onion and the irresistible flavour of pepper. Now that the prawns are all curled up into tight circles, it can be understood that it’s cooked well. Now wait until it reaches the consistency of a roast. Now ‘Prawns Roast’ is ready.
