Hi. Namaskar. How are you? Hope all are doing good. Here all of us are fine. Today I am here with a combination of vegetarian meals. I had put some like these before. Now its been a gap. Many have been asking why am I not showing such combos now. This is not only for vegetarians. You can include an egg omelette, fish fry or fish curry with this. Today I am going to show 2-3 recipes that my mother shows me. A stir fry, a tomato curry and Trissur special and a beans dish. Dont get worried hearing the name. Its just a normal curry. We just call it like that. If you have these three then you dont need anything else. I am just showing you a combination of all together. All of you do try it out. I had shown a tea cake on Thursday saying even kids could make it. Many kids made and sent me the pics through instagram and facebook Posted Veenaunty here is the cake we made. I was very happy reading that. Other kids also do try it out. Yesterday I had put a video on hairfall. Many saw that. Thanks for that. I have changed the pattern of our videos. ie our timetable. From Monday to Thursday I will be posting only cooking videos. There wont be any vlog in that. I will be posting it at sharp 1.30pm UAE time. ie 3pm in India. I will be posting on other topics like I did hairfall on a Sunday. That is also at 1.30pm UAE time. Friday or Saturday, we might post a vlog or sometimes may not. You will get bored seeing us always. So this is going to be our schedule from now on. Dont forget to check out the videos at that time. So without any delay lets see how to make our traditional lunch. Lets begin to make todays lunch. I have already prepared rice here. Today Im going to do the Indian broad beans. Many have been asking why am I not showing anything with this I am going to make a stir fry with this and then with red beans I am going to do a curry like. Then I will be showing a dish shown before, my mothers special tomato stir fry. First lets make this ready. I have shown the others before. After you buy these beans, soak it in turmeric water for 15mts and then wash it well. These are well washed. Remove the sides this way by pulling from and end and then downwards If you cook it with the thread it will later on be bitten while eating. So remove all the threads from all. If they are very tender, the thread wont come off. But otherwise it will come out this way. After that we shall slice it finely. Thats how I do it in my house. Some do it big. We add coconut also to this. Its our stlye of making. I have taken around 250gms of it. Dont take the hard ones from these. Use tender ones preferably. I touch and select them while buying. I shall remove all the threads and come I took one cup of red beans and forgot to soak it in water. I boiled it well for 10mts now. Its almost like soaked. Now lets cook them like after soaking them. Add salt and cook it. I have already boiled it well. So I will give it just 1 whistle. Otherwise it will need 4-5 whistles to get cooked. Cook it on medium flame on the other stove. By then we shall slice these beans. I have removed all the threads from it. Lets take 3-4 together and then slice it finely. Its always better to slice it thin for these dishes. If you are lazy do it as you like. I slice them like this. These are available at all the supermarkets now. I saw them at LuLu and bought them. I bought some cluster beans and ridge gourd too. I will be cutting all like these. I will be cooking this in an oven now. You can cook it directly too by crushing onions and redchillies too Or you can even just steam it in the cooker. I prefer cooking it in the oven more. Let me slice all the beans this way and then we shall do the rest. My red beans whistle had come, so I have switched it off. We will open it only after the steam goes. I have sliced all the beans. Now lets cook it. Transfer these to a glass bowl. This has lots of water in it. We dont have to add more water to it. Add little salt to it. If salt exceeds, its a problem.Mix them well. Close and cook it for 10mts. Do not over cook it. Make a hole in between. Then close and cook it. If you dont have an oven, put them into a cooker, sprinkle some water and salt and dont let the whistle come. Just once the strong steam comes, switch it off. Let me cook this in the oven and come. Lets made the red beans curry. I have taken 5 shallots, 1tbsp crushed chilli flakes and some curry leaves. I crushed them together. If you dont have chilli flakes, just crush them in the mixi. Make sure not to grind like the shallots. In my house its crushed with the rolling stone. Crushing and slicing tastes different. If you dont have flakes then use chilli powder. I used 1tbsp chilli flakes Heat a kadayi for that. Since I am taking video, I cant show all together. Its for you not to get confused. At home, you can make 3-4 of them together depending on your stove. Add little oil to the kadayi. I am adding 2tbsp coconut oil here. Once its hot, add the crushed mixture. This should be spicy. Stir this well. We at Trissur say mash and cook. All tease us hearing this. People ask us why are you calling it like that? Are you going to kill somebody? Its not to kill. Its just our slang. The same recipe I have made dal and green gram too. I make the same method using black beans too. Some are made dry and some with little gravy. This is one of the curries that people outside India can always make. Usual housewives also make it. Since this is spicy, you just need curd and pappad with this and rice. I make this on lazy days. Here it wont work. Jan doesnt eat rice or chapathi. Avi needs chicken not fish.Jan needs fish. Nandu wants rice All 3 need three types. I make myself happy from these 3 types. Thats how its here. Let this roast well. If the beans is cooked in less salt, then add some salt here. Its for the onion mix. Make sure not to add more. Cook this on medium flame for 2-3mts and then we shall add the cooked beans to it Now the raw taste has gone. If you make it without the raw smell going, the chilli taste will be felt raw. The taste will differ. Thats why I mention to make sure the raw smell goes. Now add the cooked beans to it. I had added 1 glass water while cooking the beans. This is our Thrissur special beans mashed and cooked. Now everybody has started to make it. First when I made the dal of it in youtube, many didnt know what it is Other district people dont use crushed chillies much. We use it for almost all our dishes. Now let this boil well for 5mts. Check the salt in it. Only when it boils well, the flavours get blended well. You can have this with chapathi or dosa. I have it with all. Our curry has boiled well now. Let me taste this finally and see the salt and spice. You can change the gravy consistency as you like. You can make it dry if you want. Everything is perfect. Lets keep this aside and make the stir fry. Keep another kadayi. I have cooked this without adding any water to it. I cooked it on high on micropower. I had shown how to cook peanuts in an oven last week. I have shown how to use a microwave in that. I have cooked in that or cook however you like. Now lets heat the kadayi and add some coconut oil to it. If you want you can use any other oil too. Once the oil is hot, add 6 shallots. Here we get big ones. If you get small shallots, use around 10 I have sliced then finely. Saute them well till it reaches golden colour. If you dont have shallots, you can use onions finely chopped. But shallots taste different and is the best Its not necessary all should have shallots. I am checking the salt in the cluster beans. Adding little to the onions You can clean the shallots the previous day and store them in airtight boxes. Make them soon the next day. Both the curries have almost the same ingredients. Tomato curry is actually not needed. I am doing it just for a sour curry. You can even make rasam. You can have it with just curd too. The colour has begun to change. Now let me add 1/2tbsp red chilli flakes. Mix all these well now. Saute till the raw smell goes. You can add chilli powder if you dont have flakes. But I prefer chilli flakes. In my house, they add some cooked dal also to this. It gives a special taste. Dal is added to such dishes. You can add dal or green gram dal too. But I personally like the normal dal. If you want you can cook dal and add The raw smell has gone. Now we shall add 3tbsp grated coconut to this. Mix all these well now. The raw taste of the grated coconut should also go. Now its done. Lets add the cooked beans to this. If you want you can add turmeric powder. But I used it while washing. Mix it slowly. It shouldnt be overcooked. It looks good this way to see and to eat. I cant switch on the exhaust since I am taking video. I am going on coughing here. These are my mothers special traditional dishes. Let me taste and see. Its awesome. Its superb. Now finally lets add some curry leaves and sprinkle some coconut oil over it. Our cluster beans stir fry is also ready now. Lets keep this aside too. Now lets make our last recipe, the tomato stir fry. I shall say that fast. I had already show that before. I have cut the tomatoes and kept. I have taken 3 ripe tomatoes for it. I have cut 1 onion to small pieces like this. 3 green chillies and a small piece of ginger. We dont use garlic here. Next we need curry leaves. Now lets beging to make it. Heaty a kadayi and add littl ecoconut oil. I have kept it on medium flame. This is my mothers usual curry. When guests come, she makes this soon and dry prawns chutney. I had an uncle who was at Madras. Now he is no more. He used to come without informing us. She used to make these then. My uncle loved all that she made instantly like these. Old memories that dont return Once the oil is hot, add the onions, green chillies, ginger to it. You can add 3-4 shallots if you have. It gives a special taste. The onions just have to fade. You dont have to cook it much. If it turns golden in colour, the taste changes. Add salt to it. Mix well on medium flame When it begins to fade, add little chilli powder, I am not adding turmeric powder to this. Then add tomatoes and cook well. Add curry leaves now. The more the better Ginger shouldnt exceed. Taste of the dish changes. Here the Chinese ginger doesnt have much flavour But the ginger you get in Kerala has to be added just little. That will be enough. Now the onions are done. These onions are not the Indian ones. These dont taste as good as we get in India. Now add spicy chilli powder to this. Little will do. I have added green chillies too. 1/4tsp chilli powder will do. Check later and add more if needed. Now add the cut tomatoes to this. Mix well and close and cook it. Stir in between and close and cook again. Now it should be done. Let me taste and see. It should be well cooked. Make sure to use ripe tomatoes. Salt is less. Rest is perfect. Ripe sour tomatoes are the best for this curry. All our 3 curries for the day are ready. All of you do try it out. You can have curd and pickle with this. I dont think its actually needed.
